So, is that a Rivnut, set into a plate, which is then pop riveted into place ?

If so ...... Rivnuts are available on the bay and the zone for not much money - and you wouldn't need the proper tool cos you've got access to both sides ;)
It's just a nut on a plate rivetted to underneath. Just used nuts where I could get my hand behind whilst screwing the bolt in (battery box) but 2 man job for the other side of each seat and middle seat as I'll hold nut under car whilst the other screws the bolts down.

Don't use carpet on the sides with dirty dogs ;)
Leatherette covered ply wood(or glue direct to sides) Easy to wipe down.

Do you travel them still in the cages ?

Still got the cages to sort. Just had a response from a chap on Ebay. Sending dimensions for a quote at weekend. Hopefully we can configure for three collies, then that sounds like a plan (ply covered leatherette) or wallpapered then varnished paper on ply.

Timing belt kit and camshaft oil seal (so leak was probs this and not steering box) and rear inner and outer hub seals and breather pipe done today. Greased loose spinning dust caps, so if I get oil starring on my tyres now it can only be coming from there.
