I have a 2.25 that idles very slowly and when the engine is hot it won’t idle at all. Is this easy enough to adjust?

Follow the accelerator rods to the carb & find the arm on the carb which opens it up. There should be a spring loaded screw stop which you wind in a turn to prevent the arm from closing the carb

If that dont work, you might need to adjust the air/fuel mixture screw. First gently.screw it all the way in, not tight, then screw it back out about two and a half turns. That'll get you in the right ballpark, after that fine tune the mixture by.turning the screw a quarter of a turn either way.

I did this today and it’s solved the idling issue. But it smells a bit rich now, if that makes any sense?

Swap it for a diesel then you don’t need to mess around with carbs to get it to idle correctly :D
At least you'll keep your teeth. And your hearing. And you'll do more than 30mph. And you won't be left feeling diseased :D if you have a proper petrol engine
