I can't figure how this is classed as a 6 seater. Surely it should be 3 in back and 2 in front?

Thought so mate.
Only other way would be if it had a flip down in rear, but no sign of that.

not at moment, but wouldn't take 2 mins as rear window has good protection.

My 2001 Freelander also states 6 seats on the V5, might fit the sixth to the roof bars!

instead of doing wing walking they could go roof walking that would be a first

If the V5 says 6 seater, your insurer may have charged you more when they checked your vehicle details, ie 6 seats greater risk. Might be worth checking with them.
