Mud terrains previously, I had an empty trailer on as well I just think the rear brakes should do more
You should be used to tyres then.
In general the rear brakes don't do much compared to the front BUT adjusting the rear drums ( and fitting the shoe springs correctly) made a big difference on my son's Ninety.
Have you checked the rear pads and calipers?

I put ceramic pads in the front... and they nearly STOPPED working at all! Even after a couple of thousand miles of bedding in. ABS wouldn't activate, even in the wet, if I tried!
Changed to TRW "Cotec Premium" and they work REALLY well. I can activate the ABS in the dry!
Maybe you have mismatched pads?
Does the Defender also have the Bias valve on the left inner wing, like the Discos do? They can seize.

How big was the trailer?
As may have lifted the rear slightly as trailer brakes not working.
How new are the tyres?
Releasing agent on tyres to get them out of the mould react (worse in the wet) till they have a bit of use,motbike tyres can take a 100miles before safe in the wet
No abs on mine too old, I need to check the bias valve is there a way to test it
