Mmmmm, you're making me feel hungry, well fungry actually ;)

That Bavarian dish in English = Half leg of Pork with crispy crackling, 2 cricket ball sized potato dumplings and red cabbage cooked with brown sugar and vinegar, all covered with gravy - would easily feed 4 people but is just a single Bavarian portion

Glühwein, Mulled wine
The ideal drink on a cold winters evening, spicy and warm.
Ideal for Christmas.

1 bottle good quality red wine ( 75 cl )
1 cup water
110g ( 4 oz ) sugar
1 cinnamon stick
3-4 cloves ( whole )
the juice of 1 orange
lemon peel ( unwaxed or organic )

in a saucepan mix the water, sugar, orange juice, spices and lemon peel all together
bring to the boil and let it simmer gently for 15-20 minutes
strain the liquid, return to saucepan
add the red wine and bring back to simmering point, making sure not to boil, or all the alcohol will evaporate
serve hot in special Glühwein glasses, or in preheated wine glasses, to prevent the glass from cracking.

Cherry Hearts

200g ( 8oz ) plain flour
100g ( 4oz) ground Hazelnuts
100g ( 4oz) powder sugar
125 ( 5oz) cold unsalted butter cut into cubes

OK, I can't resist - here is a recipe for a really lovely Mozzerella and aubergine bake - 15 mins to prepare ideal as veggie main course or more exotic side dish.:p

1 large onion
1 aubergine
1 can chopped tomatoes
1/2lb mozzerella cheese
2 cloves garlic
glass of wine
dash of tobasco sauce
thyme and oregano
Salt and pepper to taste

Thinly slice aubergine, spread on plate, lightly salt and leave to sweat.
Whilst aubergine is sweating finely chop onion, place in skillet and soften. Add garlic and glas of wine, stir for 1 minute then add tomatoes. Add seasoning and simmer for 10 minutes to reduce whilst doing next bit.

Lightly fry aubergines - preferrably dry fry in non-stick pan or Forman grill as they get too greasy.

In a large shallow oven proof dish, place a layer of aubergines, thin layer of tomato/onion mixture, then another layer of aubergine, then layer of sliced mozzerella, then layer of tomato, layer of aubegine, layer of cheese etc etc.

Dust with parmesan (optional) and place in medium oven for about 12 mins or until just starting to go crispy, serve and enjoy :D
