I've removed seats 6/7 to give more space for a couple of dogs in the back. I too had been thinking along the 2 boxes of cornflakes line, but it turns out to be worth the effort.
The seat mechanism is spring-loaded, and the manual says you have to make a tool to keep the springs in place. I did it using thick bendy wire (thicker than gardening-type wire, thinner than a wire coat-hanger). Re-fitting when I needed the seats again was no problem.
So, start by loosening the fixings (socket set needed). From memory, which is not very reliable, there are 2 nuts (onto studs in the body) and 2 screws (into captive nuts in the body) per seat. Same socket for all of them.
Once you can start wiggling the seat mounting away from the body, it's easier to thread a loop of wire round it to retain the spring. When you've secured the spring, fully remove the fixings.
You get to grovel about a lot in the boot area... but at least there's enough room to do it, and I'm a 6-footer.
Remember to refit the seats for the MOT, or your Disco will be tested as a 5-seater.
