i feel a bit embarrassed asking this question but got my eye on a good bulkhead from an 04 defender, question is will it go on a series 3?

I turned a 200 tdi one into a series 11a so i would think with a bit of work i think it would go

Yes it will. I did the same with a 200tdi one and converted to series 3. Take across the tunnel section, remove the defender footwells and put in series wells. Takeof excess brackets, take across the hinge mounts.
