Just wondering what the correct tyre size and brand is for this vehicle, and what wheels they should be on?

Just trying to keep it original and legally insured as standard.

Out of the box 7.50 x 16 - Avon Rangemaster.
Closest replacement 235 75 R16

Keep in mind many Defenders out of the showroom have various wheel/tyre packages. You need to be clear the below are often mutually exclusive.

1. As your vehicle was sold
2. As Land Rover recommended (standard)
3. Suitable for modern day life (for you, i.e road/all terrain/off road)
4. As your budget will allow.
5. What is available on the market.

Can't work out what vehicle you have.
 
Avon Rangemasters were fitted as standard to a lot of Land Rovers around that age. Sticking with the same 7.5R16 size, Michelin XPCs are a good alternative for road use.
 
I'm on Michelin Latitudes 7.50 x 16 at the mo, which are one of the current (well, was current until they stopped making the defender) fitments. Good on the road, quiet, fine for any of the easy off roading I have done. They are noticeably less wide than a 235/85, which probably helps reduce the rolling resistance.
 
235/85 r16 is the current factory size (until production ended anyhow)

265/75 r16 was optional in the late 90's on 7x16 rims
