With the help of a third foot on the brake pedal and myself free to investigate, i can feel the noise most strongly with my finger on the brake pipe that goes from the modulator to another device under the coolant expansion tank.
Anyone know what the device is? Wondering if that could be the true source of the noise?

Pressure conscious reducing valve.. no clue how it works out whether it's capable of making any noise
 
Modulator replaced and noise has gone. When i drained the fluid before removal, it contained a lot of bits, some of which were ferrous, but blackened, rusty?
Still leaking pressure, so that's something else that's poorly.
Will take the modulator apart when i get chance to see what's broken and if it can be repaired, but that won't be for a while

I can only think of 2 places to lose pressure: the accumulator or a leak somewhere. Given the bits of metal you found I would be tracing the brakelines very carefully.

I'm not losing fluid, so no external leaks. The low level sensor didn't work so could have been from that i guess
