None of the keys seem to fit the lock its in the drivers footwell behind the clutch pedal. Searched for it online but cant seem to find anything. Does every defender have this ?

Well obviously it can be seen its not a factory item so u wont find any info, because of its location the switch is possibly a part of an additional security measure.
So trace the wiring from the rear of the switch and you will find out what it does.
 
I will get under it again tomorrow and have a look for any wiring behind the lock, I cant locate anything in the footwell.

I agree with @discool some form of immobiliser. If it's a petrol may have been connected to the coil, if it's a diesel the fuel solenoid on the fip.
 
Thanks all its a diesel 300 tdi 1996 reg has the fob alarm and immobiliser. I will get some more pics and try and figure it out tomorrow and update.

Great let the forum know. Why fitting a switch and in that unusual position is interesting, as its a standard TOK switch the terminals would be exposed, so they may have been sealed with under-seal, anyway it makes a change from the what oil or what tyres questions :D

Forgot to post what it was, you was right linked to the fuel it has already been cut prior to my ownership. Photo taken from the back of the lock.
