Ok I have found another part that I don't know where it goes.

Looks a bit like a bit that goes up the back of the bulkhead behind the seats to attach the spare to. Might not be, though.

It's the protective cover for the steering box underneath the drivers side front wing. Keeps it clear of road crud with the mud shield.

Does the back open up to take a gas cylinder?

It does look almost although not exactly the same as the roof bit just behind the front seat of my s3 that fits over the roof stengthening strut at the gutter end above your head

Correct. I looked at mine and although similar it's shorter.
