I've done a lot of reading in the last hour or two but I still haven't come up with a definitive answer for the maximum allowable mass for my 110 CSW.

I've read the plate under the bonnet but not really sure what each mass is?

Anyone got any idea that can state their sources?

The weights on the vin plate should be

Axle 1
Axle 2
Maximum gross vehicle weight
Maximum train weight

I am fairly sure that the MAM of a 110 CSW is 2950kg, that is what is has been on all the ones I have driven. However it is still possible to overload the vehicle with less weight than that if you do not distribute the weight correctly and exceed the max axle load on either axle.
