The tracker in your link is about £140 over priced! Have a look on ebay, there are loads.
I would suggest that a hard wired tracker is probably best if your Land Rover is in regular use.
A tracker, no matter how good, is no substitute for decent physical security such as a pedal lock or a disc...
You could consider a Discovery 1:1.2 transfer box assuming that you currently have a 1:1.4 transfer box. A lot depends on your tyre size and if you do a lot of heavy towing. You always have low ratio if you get into any tight spots.
If you can. keep all the mechanical bits, a Disco 1 chassis is basically a stretched Defender chassis, so axles suspension steering, engine gearbox, front prop, rad, intercooler will fit the Defender.
If the police have said that is not stolen, they are incompetent. Your Land Rover WILL BE STOLEN. It is clearly a factory 300tdi, you can see the remains of the visible VIN in one of your pictures. It needs a specialist stolen vehicle examiner to look at it, to work out it's true identity...
If you look at the 7 o'clock position on the rear/PTO cover of the transfer-box, there should be a tab under the bolt. There should be a clip on the tab to secure the speedo cable.
I removed the sump from my Discovery years ago. I'm not sure if you have to jack up the chassis from the axle, but it can be done.
The only cure for your leak
is either welding a patch or replacement.
It would be a lot easier to take the transfer box and gear box out, although an engine crane would still be needed.
The gearbox mounts are one on the main box and one on the transfer box, which may cause problems if you want to leave the transfer box in.

Do you have to remove the roof? I would have thought that you could remove the windscreen frame on its own, then remove the bulkhead.
I'm not saying that you definitely can, but it is worth checking.
The colour of the wires should tell you what job they do. Has your 6-position light switch has been bypassed?

Be prepared for the studs for the door tops to be stubborn if rusted and check out the cost of new door tops before you use too much force to separate them.

To check, jack one wheel just off the ground and rock the wheel back and forth. while you do this you or a helper look at the UJ's and look for slop in the joint, there should be none.
