I think that the best way, you can tee into the temperature unit port but there's some risk of the sensor not getting into the fuel flow and the temperature readings could lag slightly. Would also be interested to see your setup.

Annealing them wont hurt, I always do it with new injector washers, not all parts are created equal. Banjo unions often have a concertina type washers on them and they can re seal but it's much better to replace them, flat ones will be work hardened.

Looks ok but the seal lip is a bit baggy are you sure it has grease in it? Mine was damaged fitting the new one and that's when I cut the back plate and seal and slipped it on, took no time.
