Week later update...
Fitted a new rad and very slowly refilled the coolant (well just plain water at the moment), and let it run.
15 minutes later, engine still running, and temp looks like it's sitting in the middle:

I do have a noise when the engine is running, but it sounds like it's coming towards the top side, and it's not quite as loud as that. Hoping it was just noisy tappets

I'm a little bit apprehensive - I'm still not sure if the liners have slipped so spending £100 on a rad seems like it might be foolish before I've ruled out if...

Finally got the rad out today - been blasting each entry/exit with a hose until the water runs clear.

Didn't get anywhere today unfortunately, couldn't get the bolt on the rad to loosen without the nut going with it. There's always something small in the way!

Pardon the stupid question, but where is the bolt on the driver side of the radiator?
There's one on the passenger side (although it won't come free because the nut is spinning freely - any tips?), but I can't see one on the driver's side.

I'm sure the pipe from the radiator to the expansion is correct because I can blow through it and hear bubbles, hopefully that means the other pipe is in the right place too
Perhaps tomorrow I'll remove the rad completely and try and give it a good blasting.

This is the flow out of the drain plug with the hose in the top pipe - I couldn't turn the pressure up very high because it would just blow back out the top.

Just tried it again after leaving it for a while.
Tried filling via radiator top hose, but it was already full. The metal pipe on the other end that goes to the block was also full.

Just tried to test for exhaust gases again.
Coolant started to get pushed up through the device before I could give it enough time to let the liquid change colour. Something is causing the coolant to overflow pretty consistently.

Just ran it again until it started going in to the red.
Coolant still gushing, heaters on full blast max temp.
Noticed that radiator feels cold all over - no hotspots on the top or bottom (from the limited places I could feel it anyway)

I've had another go at filling the coolant.
I drained as much as I could from the radiator, and made sure the bleed hose was clear.
Filled up until it was at the neck level, then started the engine.

Are they a pain to clear? I don't want to let it idle for too long if the temp keeps spiking.
As for that device - there aren't any extra fans that I can see (around the rad anyway), I'll have to try and follow...
Update:
Left it running with the radiator cap off, but coolant starting gushing out after a few minutes. Not sure if that's expected?
Put the radiator cap back on and let it run again, temp needle went in to the red 🔴.
