Running on 235/70/16 what is the widest tyres these rims will support without compromising speedo, gearing and body clearance.

Would bigger wheels, 18 for instance give the Disco higher gearing [more mpg]....

If you add 18" wheels your vehicle may handle better due to wider tyres, but the overall rolling radius will be very similar. As you increase the wheel size, the tyre profile is reduced to keep the radius the same.

For example 235/70 R16 changes to 255/55 R18 on the Disco 2.
