Hi
As I have the only 4x4 in my group of hobbyists I often get asked to tow them out of muddy fields muddy car parks etc especially when stuck.

to tow them out do I use High or Low ratio and diff locked or not.

Yeah, in any situation where traction is likely to be lost. Low range & diff lock.

Plus gives you far greater control.

Just tell the owners its at their own risk, last thing you want is an insurance claim for being a good guy!
 
Chances are you'll do no wrong in low diff lock. But different situations require different combinations.
 
Whatever you do, make sure their wheels are being driven when pulling out of deep mud. I accidentally disengaged my central diff on my TD5 90 and although I gave the engine revs the drive shafts weren´t rotating. As I winched it out the hand brake drum dragged along the mud and bent the output shaft on my transfer case.

Or better still pull it out in the same direction that it went in
