I recently changed the P gasket and viscous coupling and before I did the temp gauge worked and read normal, since completing the job I now get no reading at all! Could the viscous coupling be faulty? Or could there be air in the system and therefore not giving a correct reading?

have you tried touching the temp sender wire to earth and seeing if gauge rises to full
 
You say NO reading.

Have you checked the connection for the sensor?
Is there air in the thermostat housing?

The wire for the temp sender is by the bracket that you move to do the P gasket. Start with the obvious and check for broken or loose wiring.
 
sensor checked, reads max temp, connections all checked so pretty sure it is not the wiring. Maybe it is air in the thermostat housing.. if that was the case whats the bleed procedure?
