I bought a 1999 Defender at a decent price, and got an extra amount knocked off because there was no evidence of any remedial work to some of the known problems with early TD5 engines that have the 10P engine number prefix.

I'll be putting the vehicle into a local Land Rover specialist garage to get three engine jobs done,

1. Replace the head with the AMC TD5 head to guard against cracking around the injectors.
2. Replace the plastic head dowels with steel dowels.
3. Loctite the oil pump sprocket bolt.

Should I be thinking about getting any other work done at the same time?

Have the crank shaft pulley looked at to see if it's still ok. Usually a squeak when shutting the engine down
 
Check the engine loom for oil in the red plug, may be an idea to change, the injector loom while it's in bits.
 
I would not change the head, save your money, if its ok leave it be, just change the injector loom. Change the oils check all breathers are clear, check brakes, change coolant and maybe brake and clutch fluids.
Fix the leaks.

Thats a fair point, not all of them fail ( mine did) many run for years with no bother.
Similar story with the oil pump bolt, just stripped my 2001 engine at 120K miles and found all this time the oil pump did not have any locking compound on the bolt, BUT I would strongly reccomend geting that done.
 
My old mans d2 10p td5 has 200k miles , never been opened up apart from the injector loom, I would leave it until it brakes
