Air in the heater can cause watery sounds... either from air in the system, a leak allowing air into the system... or...

Shh... Head gasket issues...
I have a V8 Disco 1 that does the same. It was fine until I did a coolant flush and backwashed the clogged heater core. It's made the noise ever since, and I *probably* have a dodgy headgasket... but it never overheats, looses (much) coolant or pressurises the system... so I'm not really sure.
Mine generally makes the noise as the thermostat opens (I have a digital gauge reading from the area near the thermostat) or when I accerate after a long time of very gentle driving (when the water pump speeds up and probably moved them into the heater).
Hopefully it's not gaskets... a lot of people seem to get results from a really good bleed, using the fitting on the radiator and hoses or wherever the D2 has them.
Also, it doesn't matter if the heater in on hot or cold, the coolant circulates through the core regardless.
