97 P38 Diesel.

Ever since I got this car, 6 or so years ago, every now and again, usually on motorways, I would have no throttle response for a few seconds, the "tuning fork" light would come on the dash and then everything would go back to normal. This was quite rare and seemed to be cured when the master injector was replaced.

Recently I have replaced the hose between the MAF sensor and the intake manifold. Now, everytime I squeeze the throttle pedal even just slightly too enthusiastically the throttle becomes unresponsive, the revs die back and I have to wait a few seconds for it to go back to normal. No "tuning fork" on the dash though.

Where should I be looking to sort this one out, fellas?

You mean the MAP sensor. 97 won't have a MAF sensor.
