Have a light bar, which will have 5 individual LEDs on it. Am fine with all the relay wiring etc. Any advice on waterproof connectors to join each individual light into Live and earth wire? Five lights at 20 Amp watts each means a min 9 amp wire? Would I need to run an earth back into engine bay or could I rely on earthing it to light bar which will be clamped to vehicle roof?
 
The read/blue/yellow heatshrink crimp connector are pretty good at resisting water so long as you melt them fully.
Always earth back to the battery negative.
 
I used econoseal connectors on my roof lights onto twin core cable so they are earthed in the battery box where my relays are mounted. You can buy econoseal and cheaper imitations on ebay. this means if I need to swap a light out it is just plug and play and if I need to take the roof off (as I did when I swapped the body) again it is plug and play with no cutting of wiring.

i chose ecoseal rather than the many other sealed connectors available as they are what land rover used on their wireing looms as standard for 300tdi and td5, so they match the rest of the lights.
