So I decided to try a LOF clutch master cylinder and I can absolutely say that the difference it's made has been well worth it, the pedal is now lovely and light to press down. I've bled the system and did a test drive and the biting point feels as it was with the old clutch and there is a bit of play in the pedal before I feel resistance.

The one thing that has stumped me is the height of the pedal from the floor. It is sitting higher than the brake pedal now, measured at about 170mm from the floor. The manual says it should be closer to 140mm.

Should I try adjusting it or can I leave it alone as it seems to be working fine? I have only a tiny bit of thread left before the two locking nuts (not including the single nyloc on the end of the shaft) bottom out so I can't see how I can adjust it more.

The LOF master cylinder reduces the effort required to press the clutch pedal by having a smaller bore, meaning it effectively has a longer stroke, which is why the pedal is higher.

You can adjust it, but it will lower the bite point. Too low and the clutch won't disengage properly, or it will require the pedal to be pressed right to the floor.
 
Also you need to bleed out all the air, this is difficult on the TD5
But here's a method that works.

Bleed the clutch hydraulic system as normal.
Wedge the pedal down overnight
ln the morning, bleed the system again.

Wedging the pedal down overnight causes trapped air to be absorbed into the brake fluid.
Then, bleeding the system again removes all the fluid/air.

lf you don't perform the second system bleed in the morning, the pedal will initially feel great, but the air locks will return after a while, and you'll have that frustrating 3-5cm of free play before the pedal starts to do anything.

Ohhhh I see. In that case I will leave it as it is regarding adjustment, but I will do as you describe and bleed the system again.
