Would not start after work the other day. Changed fuel filter and fuel
pump relay switch. Still would not start after attemting several times.
Next day went back and it fired right up. I drove it about 40 miles to
work and back home. No problem there. I took it about 75 miles down the
highway and it died on me. Had to have it towed home.

CLEAN the battery posts and terminal connections VERY WELL.

could be it.

Yes, my 1999 tahoe would do the same, and turn over but not start.
it would also stop while going down the highway with all lights coming on,
and then restart and run .
Clean the connections with baking soda, wire brush and then rinse with
water. CLEAN EVERYTHING WELL
I and several others i have advised did this and never another problem.

It's probably time for a new fuel pump.

My Blazer has a "fuel pump test terminal" which bypasses the relay, your GMC
is probably similar. If you hook 12V to that you should be able to hear the
fuel pump hum. If not, replace it.
