To be fair, he never said you get it all at the same time. While all of it can still be had from a remap.
I have remapped many motors, both petrol and diesel, and have benefited from from both more power and more mpg in every case.

The extra fuel economy is when you are NOT utilizing the extra power. If you drive the same as normal, then you get better economy.
If you do use the extra power, then you do, of course, use extra fuel.
Sure, fuel economy benefits may well be small, and rarely noticed, but overall I gained around 3 mpg in my old 335d, and 5 mpg in my A3 TDI. I wouldn't expect much more than a couple mpg in a TDV8, but that would be enough I would think. Obviously you would remap a motor for the power gains rather than economy gains, but it is a nice bonus to have.
I found there were very small mpg gains on a long run with a power box on my P38, these I believe came from the fact that it would hold speed on, for example, a motorway incline without the torque converter unlocking or a downshift occurring. Over a long period with every brim to brim logged, there has been no discernible difference in overall fuel consumption which has remained at 24Mpg with or without the power box.
